Theresa’s Treats (Protein Nut Bars)

Yields 16-25


1 cup AOR Whey powder or any other protein powder
1 cup flax seeds ground
1.5 cups nuts ( mix of chopped almonds, walnuts, pecans)
1/2 cup sesame seeds
1/2- cup shredded coconut
2-3 tbsp cocoa powder
1 cup dried cherries chopped or rasins, or cranberries
1 cup peanut butter
1 (12 ounce) can coconut milk
1/3 cup chocolate chips optional
1/2 cup hemp hearts


Mix all the dry ingredients in a large bowl. In a sauce pan melt peanut butter and coconut milk. Add melted mixture to dry ingredients and mix. This forms a very sticky mass. Press the mixture into a 9 x 9 glass baking dish lined with waxed paper. Press mixture into pan. You can cover the mixture with a sheet of waxed paper and firmly press down. Then cover the top with hemp hearts or shredded coconut and press into mixture. Place in refrigerator for 3-4 hours. Grab onto wax paper to left out of pan. Cut into squares with a sharp knife.Keep in Fridge or freezer. Can be individually wrapped in wax paper. This is a very forgiving recipe, mix or match or substitute or adjust ingredients such as the nuts, dried fruit and shredded coconut as long as you can keep a consistency that is not too dry or not to runny. You can use any protein quality protein powder such as pea protein powder in place of whey powder. The nutritional information was based on cutting into 16 pieces which are really big. I often cut into 25 pieces. Keep in mind the fat content comes from the “good” fats.
